In this major work, Chaptal covers the entire wine-making process: nature and composition of grapes, ripeness and harvesting, alcoholic fermentation, the role of sugars, yeasts and temperatures, clarification, racking, fining, conservation, aging, as well as wine deterioration and disease. In particular, Chaptal developed his research on enriching must with sugar to improve fermentation and wine quality in cold regions, a practice that gave rise to the term "chaptalization".
